Honest Toil is a small-batch, artisanal extra virgin olive oil born from a very simple but deeply felt idea – to live and create in harmony with the land, rather than extracting the maximum from it. This oil is produced in Greece, on the Peloponnese peninsula, in the Messenia region, near the town of Kyparissia – a place where olive trees have grown for centuries, and harvesting is still a community affair, not an industrial process.
The founders of Honest Toil are Tomas Woodgate (another English Tom, just like me) and Juli Laki. They didn't move to Greece with a business plan in hand. It all started with participating in the olive harvest, with tired but happy hands, and with the first taste of freshly pressed oil. It was that taste – vibrant, sharp, slightly burning the throat – that became the turning point. They chose not to "create a product," but to become part of the process: working together with local small farmers, sharing responsibility, risks, and the harvest. Honest Toil today is a collaborative effort with dozens of families who grow olive trees the way their parents and grandparents did.
The oil is pressed from only one olive variety – Koroneiki. These are small, but extremely aromatic Greek olives, characterized by a high polyphenol content. The olives are picked by hand, early in the season, and pressed on the same day, not exceeding 27 °C. The oil is unfiltered and not blended with other harvests or regions. Therefore, it is slightly cloudy, deep green in color, with a clear character of grass, greens, and pepperiness. The acidity is very low – usually around 0.2–0.3%, which indicates exceptional quality.
Transparency, traceability, and respect for the environment are not just trendy words here. Honest Toil opts for slow growth, refillable systems, a smaller transportation footprint, and a direct connection with those who grow the olives. This is an oil that is not "a product for the shelf." It is the living result of a harvest, intended for those who appreciate taste, origin, and history on their plate.
