Honest Toil: from local farms around Kyparissia
Our oil is made exclusively from Greek koroneiki olives, harvested in the surrounding olive groves.
The Koroneiki is a small variety indigenous to Greece. The trees are small to medium in size, with dark green leaves, and yield a small, elongated fruit which contains a high oil content.
Our harvested olives are pressed a few kilometres away from the lands in small, family-run presses in the villages of Armeni, Vrises and Ampelofito.
Authentic, unfiltered, unblended
Our oil is cold-pressed; the temperature throughout the pressing process never exceeds 27 °C. We could extract significantly more oil if we pressed at higher temperatures, but this would also mean damaging the precious nutrients of the olive – and we'd rather keep it pure!
We don't filter our oil: once the olives have been pressed, we don't subject it to any further processes. Our oil contains sediments of olive skin and pit, which makes it very opaque and gives it a thick texture. We recommend shaking well before use.
We don't blend our oil. It comes from a single source: unlike most commercial oil brands found on supermarket shelves, Honest Toil is not blended with lower quality oils, oils from other regions or oils from previous harvests.
A rich, phenolic oil with a noticeable 'bite'
During the gentle crushing and milling process, as the olives are being processed, the natural polyphenols are first released, and then stabilised, in the oil.
Polyphenols are the healthy compounds that olive oil is most famous for. Phenolic compounds help protect blood lipids from oxidative stress, and they have also been linked to reducing the risk of cancer and heart disease.
Another note on phenolic compounds – they give an distinctive, slightly bitter taste to virgin olive oils. So when you get that peppery feeling in your throat, or taste that bitterness on your tongue, which accompanies the tasting of our oil – that is the 'bite' of a rich phenolic oil.
Lower acidity means higher quality
The acidity of an olive oil refers to the presence (or, more likely, the absence!) of free fatty acids. In olive oils, the percentage of free fatty acids is zero. Free fatty acids are sometimes subsequently created as an olive oil degrades or oxidises, or if the olive oil has been created from damaged or rotten fruit.
An extra virgin olive oil has a free fatty acid percentage of less than 0.8%. A virgin olive oil has an acidity of between 0.8% and 2%.
Our oil has an acidity of around 0.2%–0.3% (depending on the specific harvest), which is impressively low, and makes Honest Toil extra virgin.
The goodness of time: from harvest to harvest and beyond
Honest Toil has a shelf life of at least 1.5 years from the date of harvest.
Unlike filtered and processed olive oils, Honest Toil is a living substance with a full life cycle. This means that around the time of the harvest, the oil is thick, green, with a peppery aftertaste, and as it matures its colour becomes golden and its taste mellows. This is an entirely natural process that we respect and celebrate. Get to know the qualities of fresh and mature oil!
