"Honest Toil" is a cold-pressed, unfiltered extra virgin olive oil. Let's look at what that means in more detail...
Honest Toil: from local farms around Kyparissia
Our oil is made exclusively from Greek koroneiki olives, harvested from the surrounding olive groves.
The Koroneiki is a small variety native to Greece. The trees are small to medium-sized, with dark green leaves, and yield small, elongated fruits that are rich in oil.
Our harvested olives are pressed within a few kilometers of the lands, in the small, family-run presses of the villages of Armeni, Vrises and Ampelofito.
Authentic, unfiltered, unblended
Our oil is cold-pressed; the temperature never exceeds 27°C throughout the entire pressing process. We could extract significantly more oil if we pressed at a higher temperature, but that would also mean damaging the precious nutrients of the olives – and we'd rather keep it pure!
We don't filter our oil: after the olives are pressed, we don't subject it to any further processing. Our oil contains sediments from the olive skins and pits, which gives it its highly opaque appearance and thick texture. We recommend shaking well before use.
We don't blend our oil. It comes from a single source: unlike most commercial oil brands found on supermarket shelves, Honest Toil is not blended with inferior oils, oils from other regions, or oils from previous harvests.
A rich, phenolic oil with a noticeable "bite."
During the gentle crushing and grinding process that the olives undergo, natural polyphenols are first released and then stabilised in the oil.
Polyphenols are the healthy compounds that olive oil is most famous for. Phenolic compounds help protect blood lipids from oxidative stress and have been linked to reducing the risk of cancer and heart disease.
Another note on phenolic compounds – they give extra virgin olive oils their distinctive, slightly bitter flavour. So when you experience that peppery sensation in your throat, or that bitterness on your tongue, which you get when tasting our oil – that's the "bite" of a rich phenolic oil.
Lower acidity means higher quality
The acidity of an olive oil refers to the presence (or, more likely, the absence!) of free fatty acids. In extra virgin olive oils, the percentage of free fatty acids is zero. Free fatty acids are sometimes generated later when olive oil degrades or oxidises, or if the olive oil is made from damaged or rotten fruits.
Extra virgin olive oil has a free fatty acid content of less than 0.8%. Virgin olive oil has an acidity of between 0.8% and 2%.
The acidity of our oil is about 0.2–0.3% (depending on the particular harvest), which is impressively low and makes Honest Toil extra virgin.
The good times: from harvest to harvest and beyond
Honest Toil has a shelf life of at least 1.5 years from the harvest date.
Unlike filtered and processed olive oils, Honest Toil is a living substance with a full life cycle. This means that around the time of harvest, the oil is thick, green, with a peppery aftertaste, and as it matures, its colour turns golden and its flavour mellows. This is a completely natural process, which we respect and celebrate. Get to know the properties of fresh and mature oil!
