Honest Toil: From local farms around Kyparissia
Our oil is made exclusively from Greek Koroneiki olives picked from the surrounding groves.
Koroneiki is a small variety indigenous to Greece. The trees are small to medium-sized, with dark green leaves, and yield small, elongated fruit with a high oil content.
Our harvested olives are pressed a few kilometres from the lands in small, family-run presses in the villages of Armeni, Vrises and Ampelofito.
Authentic, unfiltered, unblended
Our oil is pressed using the cold-press method; the temperature throughout the pressing process never exceeds 27°C. We could extract a significantly higher yield of oil if we pressed at higher temperatures, but this would also mean damaging the precious olive nutrients ā and we'd rather keep it pure!
We donāt filter the oil: once the olives have been pressed, we donāt put it through any additional processes. Our oil contains olive skin and pit sediment, which makes it very opaque and thick in texture. We recommend giving it a good shake before use.
We donāt blend the oil. It comes from a single source: unlike most commercial oil brands found on supermarket shelves, Honest Toil is not blended with inferior oils, oils from other regions, or oils from previous harvests.
A rich, phenolic oil with a perceptible 'bite'.
During the gentle crushing and grinding process, as the olives are processed, the natural polyphenols are first opened up and then stabilised in the oil.
Polyphenols are the healthy substances for which olive oil is most renowned. Phenolic compounds help protect blood lipids from oxidative stress, and they are also linked to reducing the risk of cancer and heart disease.
Another note on phenolic compounds ā they give virgin olive oils their distinctive, slightly bitter flavour. So when you get that peppery sensation in your throat, or taste that bitterness on your tongue that comes with tasting our oil ā thatās the ābiteā of a rich, phenolic oil.
Lower acidity means better quality
The acidity of olive oil refers to the presence (or more likely, absence!) of free fatty acids. In virgin olive oils, the percentage of free fatty acids is zero. Free fatty acids are sometimes subsequently created as an olive oil degrades or oxidises, or if the olive oil is produced from damaged or spoiled fruit.
Extra virgin olive oil has a free fatty acid percentage of less than 0.8 per cent. Virgin olive oil has an acidity of between 0.8% and 2%.
Our oil has an acidity of around 0.2ā0.3% (depending on the specific harvest), which is impressively low and makes Honest Toil extra virgin.
The arc of goodness: From harvest to harvest and beyond
Honest Toil has a shelf life of at least 1.5 years from the harvest date.
Unlike filtered and processed olive oils, Honest Toil is a living substance with a full life cycle. This means that around harvest time, the oil is thick, green, and has a peppery aftertaste, and as it matures, its colour turns golden and its flavour mellows.
